For a delicious snack or party dessert, this slice is a show stopper! Using nutritious ingredients, you can’t go wrong.

 

 Ingredients:

 

Base
  • 3/4 cup raw almonds (you can also use walnuts or pecans)
  • 1/2 cup soft Medjool dates, pitted
  • ¼ tsp sea salt
  • ¼ cup shredded coconut
  • 3 Tbs Coconut oil
Filling
  • 3 cups shredded coconut
  • 3 Tbs water
  • 1 Cup Mixed Berries (frozen or fresh)
  • 1 banana
  • ½ Cup Rice Malt Syrup
  • 1tsp vanilla bean extract
  • Pinch salt
Topping
  • 200g dark chocolate
  • 2 teaspoons coconut oil

Method:

Base
  1. Place almonds and coconut in a food processor and process until it forms a nice crumb.
  2. Add the dates, salt, coconut oil and pulse until it comes together.
  3. Line a baking tray with baking paper and fill with base ingredients, pack down firmly. Place in freezer while making the filling.
Filling
  1. Place all the filling ingredients, except for the berries, into a food processor and process for 2 mins. Add berries and process for another minute.
  2. Spread the filling over the base and make sure packed down and even. Place back in the freezer while making the topping.

 

Topping
  1. Melt the chocolate and coconut oil in a bowl over a saucepan of simmering water. Make sure the bowl doesn’t touch the water.
  2. Once the chocolate is melted, drizzle over the top of the slice and place in freezer until set.
To Serve:

Slice into squares and serve with extra shredded coconut on top.
