Healthy Rum Balls

Ingredients

  • 1 cup pitted dates
  • 1 cup almonds
  • 1/3 cup raw cacao powder
  • 2 tablespoon chia seeds
  • 1/3 cup coconut oil
  • 1/2 cup shredded coconut
  • ¼ Cup Shredded coconut – for rolling
  • 1 – 1 ½ Tbs dark rum or rum essence

Method

  1. Add nuts, cacao, shredded coconut, coconut oil and chia seeds to blender or food processor and mix until smooth consistency.
  2. Add dates and rum or rum essence and process again (ensure all dates are blended and there are no chunks).
  3. Let mixture sit for 15 minutes to intensify the flavours.
  4. Roll mixture into bite size balls, approx. size of 20C pieces.
  5. Roll balls in shredded coconut or any type of crushed nuts and serve.
