Chimichurri Scotch Fillet Fajitas with Tomato Lime Salsa

This is a great recipe packed with bags of flavour! Chimmichurri is a South American sauce used on grilled meats. You can use it as a marinade and a sauce…it is amazing!

Chimichurri Sauce


  • 2 jalapeno chillies, chopped
  • 3 cloves garlic
  • 2 cups flat leaf parsley
  • 1 3/4 cups fresh coriander
  • 2 Tbsp oregano
  • 1 cup coconut oil, melted
  • ¼ cup lime juice
  • ½ cup apple cider vinegar
  • ½ tsp ground cumin
  • Pinch sea salt

1. Place jalapeno, garlic, parsley, coriander and oregano into a food processor. Pulse until everything is roughly chopped.

2. Add coconut oil, lime juice, apple cider vinegar, cumin, and salt. Process until mixed and chopped finely. Set aside in a bowl.



  • 1 Lebanese cucumber, peeled and diced
  • 2 medium tomatoes, diced
  • 1 long green chilli, deseeded and minced
  • ½ red onion, diced finely
  • ½ small clove garlic, minced
  • 2 Tbs lime juice
  • 1 Tbs flat leaf parsley, chopped
  • ¼ cup coriander, chopped
  • Pinch sea salt and pepper to taste.
  1. Mix all ingredients into a bowl, cover and set aside until ready.


Scotch Fillet

  • 1 x packet small flour tortillas
  • 2 x 250g scotch fillet steak
  • 1 Tbsp Coconut oil
  • Sea Salt and Pepper
  1. Heat coconut oil in a griddle pan over a medium heat.
  2. Season beef with salt and pepper, add to pan and cook for 3-4 minutes on each side, depending on how you like your beef cooked.
  3. Remove beef from pan and onto a plate, cover with foil and rest for 5 minutes before slicing.
  4. Slice into strips for serving.


To Serve: Place beef strips onto flour tortilla, drizzle with Chimichurri sauce and top with lime tomato salsa.
