Berry, Almond and Coconut Granola Parfait


Almond and Coconut Granola

  • 2 1/2 cups rolled oats
  • 2/3 cup sliced almonds
  • 1/2 cup unsweetened desiccated coconut
  • ¼ cup hulled pumpkin pepitas
  • ¼ cup sunflower seeds
  • 1/2 teaspoon salt
  • 60g unsalted butter
  • 90ml honey
  • 1 cup mixed dried fruits, I used cranberries, goji berries, raisins and cherries. You can use apricots, papaya etc
  1. Preheat oven to 160C
  2. In a large bowl stir together oats, almonds, coconut, pumpkin pepitas, sunflower seeds, and salt.
  3. In a small saucepan melt butter with honey over low heat, stirring. Pour butter mixture over oat mixture and stir until combined well.
  4. Line a large baking tray with baking paper, spread granola evenly and bake in middle of oven, stirring halfway through baking, until golden brown, about 15 – 20 minutes. You might have to do this in 2 batches to make sure it cooks evenly.
  5. Cool granola then stir in dried fruits.
Tips: You can keep the granola for up to 2 weeks in an air tight container at room temperature.

Berry Mix

  • 4 cups Frozen Mixed Berries
  • 60ml Honey
  • 750ml Greek yoghurt
  1. Place a medium size saucepan over a medium to high heat and add the frozen berries. Heat until defrosted for approx. 3 mins.
  2. Add honey to mixed berries and cook until the mixture comes to the simmer, turn heat to low and simmer for 5 mins until mixture has thickened.
  3. Set aside and let cool.
  4. To serve, layer the glass with granola then yoghurt, berries, granola, yoghurt, berries and granola etc. Top with some fresh raspberries and granola sprinkled on top.


This has some great health benefits, I used cranberries, goji berries, pumpkin pepitas, sunflower seeds, all of these have amazing nutritional benefits.
