Fantastic brain food recipe that is full of awesome health benefits from the chilli, tomato and parsley. The health benefits from some of these ingredients assist with-

Serves 4

  • 4 x Barramundi Fillets
  • 1 Tbsp Olive oil
  • Sea salt
  • Cracked pepper
  • 200g fettuccine pasta
Chilli Tomato Sauce
  • 1 Tbsp olive oil
  • 1 clove garlic crushed
  • 1 Eschallot diced
  • 2 long chillies, deseeded and diced, extra for garnish (add extra if you like it spicy)
  • ½ bulb fennel, sliced finely
  • ¼ white wine
  • 1 can crushed tomatoes
  • ¼ cup fresh basil
  • ½ cup flat leaf parsley
  • 2 Tbs lemon juice
  • ½ tsp sea salt
  • ¼ tsp cracked pepper

1, Heat oil in a medium saucepan over a medium heat. Add garlic, eschallot and chilli. Cook for approx. 2 minutes then add fennel. Cook until fennel has softened, approx. 5 minutes.

2. Bring a large saucepan over water to the boil then add fettuccini and cook for 12 minutes or until al dente.

3. Add wine and deglaze the saucepan, add crushed tomatoes, basil and parsley and cook for approx. 10 minutes until mixture has thickened slightly.

4. Meanwhile, heat a large frying pan with olive oil over a medium to high heat.

5. Season fish fillets with sea salt and cracked pepper, add barramundi fillets to the pan and cook for approx. 3-5 minutes on each side, depending on thickness of fillet.

6. Drain pasta and toss through sauce.

7. Serve pasta in a bowl and top with barramundi fillets, fresh parsley, chilli and shaved parmesan.
